How To Make Jollof Rice: A Delicious Nigerian Delight for Non-Nigerians

Jollof rice, a vibrant and flavourful dish originating from West Africa, has gained immense popularity worldwide. With its distinct taste and colourful presentation, Jollof rice has become a favorite among food enthusiasts globally.

Ingredients :



1. 2 cups of long-grain rice

2. 1 onion, finely chopped

3. 1 bell-pepper, finely chopped

4. 2-3 fresh tomatoes, blended or finely chopped 

5. 3-4 cloves of garlic, minced 

6. 2 tablespoons of vegetable oil.

7. 2 table spoons of tomato paste 



8. 2-3 cups of chicken or vegetable broth

9. 1 tea spoon of thyme

10. 1 tea spoon of curry powder

11. 1 tea spoon of paprika 

12. 1 tea spoon of dried thyme

13. 1 tea spoon of dried bay leaves 

14. 1 scotch bonnet pepper (optional for heat)

15. Salt and pepper to taste.


Instructions :

1. Prep the ingredients : Fine chop the onions, bell pepper, and garlic. Blend the tomatoes or finely chop them. If you prefer spicy food, mince the Scotch bonnet pepper.


2. Wash The Rice : 

Before cooking, wash the rice thoroughly under cold water until the rice water urns clear. This will remove any excess starch and ensure  fluffy cooked grains.


3. Heat the oil : In a large, deep pot or skillet, heat the vegetable oil over medium heat. Once heated, add the chopped onions and garlic, singe until softened and fragrant, for about 5 minutes



4. Add the bell peppers and tomatoes : Add the finely chopped bell pepper and the blended or chopped tomatoes to the pot. Stir everything together and let the mixture cook for about 5 minutes, or until the tomatoes are well cooked and the oil starts to separate from the mixture.

5. Stir the tomato paste and spices : Add the tomato paste, dried thyme, curry powder, paprika, dried bay leaves, and salt. Mix well and coo for another 2-3 minutes. This step helps to enhance the flavours.

6. Pour in the broth and bring to a boil : Add the chicken or vegetable broth, ensuring it covers the tomato mixture. Stir everything together and bring mixture to a boil

7. Add the rice : Once the mixture is boiling, add the washed rice to the pot. Stir gently to coat the rice with the tomato mixture, ensuring even distribution 

8. Cook the Jollof rice : Reduce the heat to low, cover the pot with a tight- fitting lid, and let the rice cook for about 20-25 minutes. Do not stir during this time to avoid breaking the rice grains.


9. Check for doneness : After cooking time, carefully uncover the pot and check if the rice is cooked to your preferred texture. If the rice is still firm, cover it and let it cook for a few more minutes until fully cooked .


10. Serve and enjoy! Once the rice is done, fluff it gently with a fork. You can garnish your Jollof rice with some fresh chopped cilantro or parsley for added freshness .
